Directions

Step 1
Prepare Filling:
  • Heat 3 tablespoons of Ghee/Oil in a pan.
  • Add chopped onions and sauté until golden brown.
  • Add 1 tablespoon of minced garlic and cook until fragrant.
  • Mix in Green Chili Paste made up of 12 chilies and 3 chopped green chilies.
  • Stir in shredded boiled chicken (1kg).
  • Season with 1 tablespoon of crushed black pepper, 3/4 tablespoon of salt, 1/2 tablespoon of MSG/China Salt, and 1/2 tablespoon of crushed cumin.
Step 2
Make Dough:
  • Combine 1kg of All-Purpose Flour with 20gms of salt.
  • Add 60gms of Ghee and gradually mix in 2 cups and 4 tablespoons of water.
  • Knead into a smooth dough.
Step 3
Layering Paste:
  • Mix 3 tablespoons of Corn Flour, 2 tablespoons of Ghee Oil, and 1/2 tablespoon of Baking Powder.
Step 4
Assembly:
  • Cut the dough into portions and shape them into 60g balls.
  • Roll out each ball and apply the layering paste.
  • Fold the dough and roll it out again.
  • Repeat the process for flakiness.
  • Fill each 60g ball with 40g of the chicken mixture.
Step 5
Frying:
  • Heat oil to approximately 80 degrees Celsius.
  • Fry the filled dough balls until lightly golden.
  • Flip for even cooking.

Serve:
  • Enjoy your Delicious Chicken Kachori with a Desi twist!
